It looks like you won't be able to connect the Fitbit Sense 2 to Wi-Fi, a feature also missing from the new Versa 4 and Versa Lite Edition. 9To5Google notes that Fitbit's latest smartwatch can only connect via Bluetooth. This likely means slower updates. Unfortunately, if you don't have your phone with you and it's not connected to the watch, you won't be able to use the data features.

The support page states that WiFi connectivity is not available on Fitbit Sense 2, Fitbit Versa Lite Edition, or Fitbit Versa 4. Interestingly, WiFi technology is being integrated into newer devices. But it is not available and cannot be activated. It's a bit of an odd move to add technology when there were no plans to do a contact method.

Fitbit's next smartwatch is packed with features. Including some notable improvements over previous models. But Fitbit is also removing items. Along with the lack of Wi-Fi connectivity, there will be no offline music playback.

Or maybe there is no music playback or connection. It seems that the three upcoming watches will not support music playback controls. Allow users to control playback settings directly from a connected phone.

This might not be a deal breaker for most users as music playback is still available on the connected phone. But it's easier to raise your wrist and break or play. Instead of taking the phone out of your pocket and putting it there.
